Mahiwe Hand-Pounded Jowar Crackers

Made in Kurla home kitchens, these jowar crackers are dried on bamboo mats under open skies, preserving age-old preparation methods passed through families.

The dough starts with freshly milled jowar flour, water, and a pinch of salt, mixed by hand until it achieves a pliable, non-sticky consistency. Then it is divided into small balls and flattened by hand or rolled thin with a wooden roller—never mechanized. The dough sheets are cut into round or oval shapes before being laid on clean bamboo mats, arranged in single layers with space for air to circulate.

Drying takes one to two full days, depending on sun intensity and humidity. The mats are moved throughout the day to follow the sun’s path, avoiding dew or shade that might cause sticking. This slow air-drying locks in crispness without preservatives, while retaining natural fiber and subtle sweetness. Wind and ambient heat ensure natural fermentation, which enhances digestibility and shelf life.

Once dry, the crackers are packed in cloth or paper, never plastic, to preserve breathability. They keep well for weeks in cool, dry places, and toast beautifully in a pan or oven. Their light, flaky texture makes them ideal with chai or as a base for chutneys and spreads. Due to the absence of ovens or deep-frying, they carry a delicate, nutty aroma unique to sun-dried grains.
