Ferment & Feast

A cohesive menu blending preserved, roasted, and spiced components with bold Middle Eastern-inspired flavors.

The kraut is the anchor—shred cabbage, salt it, and let it ferment at room temp for 3–7 days until tangy and crisp. Pack it in a jar once bubbly and active, then store refrigerated for up to 3 months. It adds brightness and probiotic depth to sandwiches or grain bowls. Use half napa, half green cabbage for texture and mellow acidity.

Roast carrots whole or halved tossed with olive oil, salt, and honey or maple syrup at 400°F for 25–30 minutes until tender and charred at the edges. Immediately drizzle with a za’atar-spiced oil (heat oil, stir in za’atar, cool slightly). The high heat caramelizes sugars, while the spice blend delivers earthy, slightly citrusy notes.

Harissa roasted chickpeas are simple: drain and dry rinsed chickpeas, toss with olive oil, harissa, and salt, then roast at 400°F for 20–25 minutes until crunchy. They hold well for 5 days refrigerated and re-crisp in a skillet. Pair with the carrots and kraut on sourdough or over yogurt for a satisfying meal with contrasting textures and warmth.
